Hearty Vegetable Soup (Classic Comfort Bowl)

Introduction

This cozy vegetable soup is simple, nourishing, and full of comforting flavors. Loaded with tender vegetables in a rich tomato broth, it’s perfect for chilly days, light dinners, or meal prep for the week.

Ingredients

1 tbsp olive oil

1 onion, chopped

2 carrots, sliced

2 celery stalks, sliced

1 cup green beans, cut

1 cup cabbage, chopped

1 cup potatoes, diced

1 can (400 g) diced tomatoes

4 cups vegetable or chicken broth

1/2 cup corn (optional)

1 tsp salt (or to taste)

1/2 tsp black pepper

1/2 tsp paprika

1/2 tsp dried thyme or mixed herbs

Instructions

Heat olive oil in a pot over medium heat.

Add onion, carrots, and celery; sauté for 5 minutes until softened.

Stir in potatoes, green beans, cabbage, and corn.

Add diced tomatoes, broth, salt, pepper, paprika, and herbs.

Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.

Taste and adjust seasoning. Serve hot and enjoy.
