Crispy Potato Fritters with Onions and Herbs

Ingredients:

4 medium potatoes

1 large onion, finely chopped

2 tablespoons fresh parsley, chopped

1 egg

1/2 cup flour (or as needed)

Salt and pepper to taste

1 teaspoon garlic powder (optional)

Oil for frying

Instructions:

Peel and grate the potatoes: Grate the potatoes into fine shreds. Place them in a clean kitchen towel and squeeze out any excess water.

Prepare the onions: Finely chop the onions and set them aside.

Mix ingredients: In a large mixing bowl, combine the grated potatoes, chopped onions, parsley, egg, salt, pepper, and optional garlic powder. Add flour a little at a time until the mixture is firm enough to hold its shape when formed into balls.

Shape the fritters: Take small portions of the potato mixture and roll them into balls or flatten them into small patties, depending on your preference.

Heat the oil: Heat oil in a large frying pan over medium heat.

Fry the fritters: Carefully drop the fritters into the hot oil. Fry them for 3-4 minutes on each side, or until golden and crispy.

Drain and serve: Remove the fritters from the oil and place them on paper towels to drain any excess oil. Serve hot.
