🫐 Blueberry Swirl Cheesecake

🧺 Ingredients

Crust

200 g digestive biscuits (or graham crackers)

100 g melted butter

Blueberry Swirl

200 g blueberries (fresh or frozen)

3 tbsp sugar

1 tbsp lemon juice

1 tsp cornstarch + 2 tbsp water

Cheesecake Filling

600 g cream cheese (room temperature)

150 g sugar

200 ml heavy cream

2 tsp vanilla extract

2 eggs (room temperature)

Decoration (optional)

Whipped cream

Fresh blueberries

Mint leaves

👩‍🍳 Instructions

1️⃣ Prepare the Crust

Crush biscuits finely.

Mix with melted butter.

Press into the bottom of a lined springform pan (22 cm).

Chill in fridge for 20 minutes.

2️⃣ Make Blueberry Sauce

Cook blueberries, sugar, and lemon juice over medium heat (5–7 min).

Add cornstarch slurry and simmer until thick.

Cool completely.

3️⃣ Cheesecake Filling

Beat cream cheese and sugar until smooth.

Add eggs one at a time.

Mix in vanilla and cream (do not overbeat).

4️⃣ Assemble

Pour cheesecake mixture over crust.

Spoon blueberry sauce on top.

Swirl gently with a knife for marble effect.

5️⃣ Bake

Bake at 160°C (320°F) for 50–60 minutes

Center should slightly wobble.

Turn off oven, leave door ajar for 1 hour.

6️⃣ Chill

Refrigerate at least 4 hours (best overnight).
