Spinach and Cheese Casserole

Ingredients:

400 g fresh spinach (or 250 g frozen, thawed and drained)

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil or butter

3 eggs

150 g feta cheese (crumbled)

100 g shredded mozzarella or cheddar

100 ml milk or cream

2 tbsp flour (or breadcrumbs for a firmer texture)

Salt and black pepper to taste

A pinch of nutmeg (optional)

Fresh or dried parsley for garnish

Instructions:

Prepare the spinach mixture:

Heat olive oil or butter in a pan.

Sauté onions and garlic until soft.

Add spinach and cook until wilted (if using fresh). Let it cool slightly.

Mix the filling:

In a large bowl, combine eggs, milk (or cream), flour, salt, pepper, and nutmeg.

Add the spinach mixture, feta, and half of the mozzarella. Mix well.

Bake:

Grease a baking dish and pour in the mixture.

Sprinkle the remaining mozzarella and parsley on top.

Bake in a preheated oven at 180°C (350°F) for about 30–35 minutes, or until golden and set.

Serve:

Let it cool for 5–10 minutes before slicing.

Serve warm as a main dish or side.
