Orange Marmalade Cookies

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup sugar

Zest of 1 orange

1 tablespoon fresh orange juice

1 large egg

1/2 teaspoon vanilla extract

1/2 cup powdered sugar (for rolling)

1/4 cup orange marmalade (for topping)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

Mix Dry Ingredients:

In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

Prepare the Cookie Dough:

In a large bowl, cream the softened butter and sugar together until light and fluffy. Add the orange zest, orange juice, egg, and vanilla extract, and beat until combined.

Gradually add the dry ingredients to the butter mixture, stirring until fully incorporated. The dough will be soft and slightly sticky.

Form the Cookies:

Roll the dough into 1-inch balls. Gently roll each ball in powdered sugar to coat. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.

Use your thumb to gently press a small indentation in the center of each cookie to create space for the marmalade topping.

Bake the Cookies:
