Zucchini & Herb Pancakes Recipe

Ingredients:

2 medium zucchinis, grated

2 eggs

1 cup flour (125g)

1/2 cup milk (120ml)

1/4 cup water (60ml)

2 tablespoons chopped parsley (or cilantro)

2 tablespoons chopped green onion (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon baking powder (optional, for fluffiness)

Oil or butter for cooking

Instructions:

Prepare the zucchini

Grate the zucchini and squeeze out excess water using a clean cloth or your hands.

Make the batter

In a large bowl, whisk together eggs, milk, and water.

Add flour, salt, pepper, and baking powder. Mix until smooth.

Stir in grated zucchini, chopped parsley, and green onions.

Cook the pancakes

Heat a non-stick skillet or pan with a small amount of oil or butter over medium heat.

Pour a ladle of batter into the pan and spread it thin like a crepe.

Cook for about 2 minutes on each side or until golden brown.

Serve

Stack them on a plate and serve hot. You can enjoy them plain or with cheese, yogurt, or a dipping sauce.
