AVOCADO AND SPINACH EGG SALAD: A NUTRITIOUS AND CREAMY DELIGHT

### Ingredients:

– 2 ripe avocados, diced

– 4 hard-boiled eggs, chopped

– 4 cups fresh spinach, chopped

– 1 tablespoon olive oil

– 1 tablespoon lemon juice (or more to taste)

– Salt and pepper to taste

– Optional: 1/4 cup red onion, finely chopped (for added flavor)

– Optional: Fresh herbs like dill or parsley for garnish

### Instructions:

1. Prepare the Ingredients: Start by hard-boiling the eggs. To do this, place the eggs in a pot, cover them with water, and bring to a boil. Once boiling, cover the pot and remove it from heat. Let the eggs sit for about 9-12 minutes, then transfer them to an ice bath to cool before peeling and chopping.

2. Combine Ingredients: In a large mixing bowl, add the diced avocados, chopped hard-boiled eggs, and chopped spinach. If you’re using red onion, add it here as well.

3. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. You can adjust the lemon juice to your taste if you prefer a more tangy flavor.

4. Mix Everything Together: Pour the dressing over the avocado, egg, and spinach mixture. Gently toss everything together until well combined. Be careful not to mash the avocados too much; you want to keep some texture.

5. Garnish and Serve: If desired, sprinkle fresh herbs on top for added flavor. Serve the salad immediately on its own, on toast, or in a wrap.
